Peony Tarragon Gimlet

For the Simple Syrup

1/2 cup sugar
1/2 cup water
2 tablespoons fresh tarragon

For the Cocktail

2 ounces Peony Vodka
1 ounce fresh squeezed lime juice
3/4 ounce tarragon simple syrup


For the Tarragon Simple Syrup

Mix 1/2 cup sugar, 1/2 cup water, 2 tablespoons of fresh tarragon. Bring to boil, let it cool to room temperature, and strain


For the Cocktail

Pour all ingredients in a cocktail shaker with ice, shake, strain into a martini glass. Garnish with a sprig of tarragon and/or a lime wheel.
